What to do with Cookies?

Now that logging in is so easy, I don't like how certain sites [i]don't[/i] require me to log-in. (Gmail, Amazon, etc.)

Often these sites require cookies for managing things while you are logged in, so cookies are not just for logging you in.
What I personally tend to do is to uncheck any "remember me" button but leave cookies enabled "only for sites I visit".

Amazon actually does something fairly clever. They use a cookie to identify you so that they can offer recommendations and the like, but for any real account activity they do require a login. For Google run sites, I've found that simply unchecking the "Remember me on this computer" box on various sign-in pages stops the automated logins.
What you can do is try turning off cookies completely (setting them to "Never") and see what breaks. My guess is that too much will break if you try that, and you will have to turn them on again to have a reasonably smooth experience with many sites. And so hunting down the "remember me" settings will turn out to be the best option.
But please feel free to experiment with "Never" and certainly let us know what you discover.
